Ever wonder what to do with that single serving of leftover spaghetti? Make a Frittata di Napoletana! This dish, made with leftover pasta the next day, or a couple of days later is traditional to the Italian region of Napoli. Nonna Elda learned it from her friend Christina who was Napoletana many years ago.

The wonderful thing about Frittata Napoletana is that it’s a no-waste recipe, that costs very little to make, and can be customized to help you use up whatever is in the fridge. It’s filling, nutritious, delicious, and best of all cheap to make and helps you stretch your food budget for the month.

Now, Nonna is using leftover spaghetti with her tomato sauce on it for this, and you just chop it up when you add it to your egg mixture. There are six eggs here and that will be more than enough for a family if you’re using it in a sandwich. However you can also serve this on it’s own, or as a side dish.

You can customize this dish with left over vegetables and other kinds of meats like sausage or meatball. This is perfect for when you have just a little bit of leftovers that don’t quite make a full serving that you don’t want to throw out!

There’s no need to throw anything out when you can make a delicious Frittata!

Frittata Napoletana

Ingredients

  • 1 cup leftover spaghetti
  • 0.5 cup cut meat of your choice, we use mortadella here
  • 0.5 cup shredded mozzarella or cheese of your choice
  • 6 eggs
  • You can add veggies if you like
  • olive oil
  • Salt & Pepper to taste

Directions

  • Cut up your leftover spaghetti
  • Cut up some deli meat of your choice we used mortadella sausage would also be nice
  • Crack six eggs and mix together, then add your spaghetti and meat
  • Add cheese and veggies if you would like
  • Cover a small frying pan with olive oil, use a paper towel to cover the pan surface completely
  • When the oil is hot pour in your egg mixture cook on medium heat
  • After about five minutes using a plate over the sink, flip your Frittata carefully
  • Cook for a few minutes then flip again, you need to make sure it cooks through because it is thick
  • Serve, it is easier to cut when it is cooled off. Can be eaten alone, as a side dish, or in a sandwich.
